One Pot Turkey Tacos Recipes

toppingsSo I am always looking for ways to add in super healthy meals to my diet without adding in a ton of prep time in the kitchen. My One Pot Turkey Taco recipe does just that! This is a delicious meal that includes very little prep time and is super easy to cook. I also like to do the prep ahead of time and refrigerate the ingredients until I am ready to start cooking.  Also, this meal is just as tasty if you want to cook everything ahead of time and heat everything back up when you are ready… it is up to you!


Prep time: 15 minutes     Cook time: 20 minutes     Total Time: 35 minutes


  • 1 lb. lean ground turkey
  • 2 cups of water
  • 1 jar of salsa
  • 1 diced garlic
  • 1 diced red or white onion
  • 1 can of corn
  • 1 can of black beans drained and rinsed
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cups of brown or white rice  I prefer broken jasmine rice
  • Toppings: shredded cheddar cheese, diced avocado, diced tomatoes, lettuce, cilantro, green onions


  1. In a large skillet over medium heat, cook and brown ground turkey, breaking up the meat into small pieces.  Be sure to drain grease etc before adding in the rest of the ingredients.
  2. Stir in water, salsa, peppers, onions, garlic, and corn.  Bring to a boil.  Add rice.  Simmer on medium for 5 minutes.  Cover with the lid and turn on low for about another 2-3 minutes and then turn off heat.  Let it stand for about another 15 minutes to let all the liquid absorbed into the rice.
  3. Dish into bowls add your favorite toppings.  And it’s dinner time!
